Salsa!!

Jen had a TON of tomatoes from her garden so we threw together a batch of salsa.  We actually ended up doubling our batch so it made a ton!!!  We made the salsa at my house so Tanner could still nap and play.  Matt was home during the day to help with Tanner too so that was nice.  It took us several hours to cook the tomatoes and chop up everything.  The processing went really quick and I was able to do that while the boys were home in the evening.

It was a great day because Tiff, Layne, and Michael brought us lunch so we took a break and enjoyed lunch with everyone.  It's so great to have their friendship.  It's making the transition a little easier!  After lunch we had everyone try the salsa.  It was too tomatoey so Jen had us add a little more of this and a little more of that.  While we were doing that Tiff said "you do have a recipe don't you?"  That made us laugh!  We explained that we use the recipe as a recommendation and then add things to taste.  Jen made the salsa perfect!!  It's the best batch that I've ever made!  We made 65 pints of salsa!!!!  Then a couple of weeks later, Jen made another batch all by herself and shared it with me.  So now I'm stocked on salsa for the winter.
